Shrimp and Spinach Curry



Ingredients:
1lb shrimp
100gms spinach, shredded
1tbs oil
1/2tsp cumin seeds
1big onion. finely chopped
1big tomato, finely chopped
3-4 green chillies or to taste, finely chopped
1tbs ginger-garlic paste
1/4tsp turmeric powder
1tsp garam masala
1tsp coriander powder
3/4tsp cumin powder
salt to taste
2tbs cream
1/4cup coriander leaves

Method:
Marinate the shrimp in turmeric powder and salt and keep aside.
Heat oil and add the cumin seeds.
When they begin to splutter add the onions and green chillies and fry till brown. Add the tomatoes and ginger-garlic paste and fry till the oil separates. 
Add the masalas and fry for 1min. Then add the spinach and fry till it shrinks and starts releasing water. 
Mix in the shrimp and cook for about 8-10mins or till done. There should be enough water at this point, if not add some. Do not overcook the shrimp or it will become chewy.
Mix in the cream and check the seasonings. Mix in the coriander leaves and serve.

  5. This is a great recipe. I've made it twice now. First time I followed it almost to a tee (didn't have any cumin seeds). The last time I made some adjustments based on other Indian shrimp recipes and it made this an even better dish. 1)It helps to pre-cook the shrimp (turmeric and salt included) and set it aside while you prepare the rest of the dish in the same pan. Pre-cooking it lets turmeric fry in the oil and takes away the "earthy" taste of that spice. 2) add the tomatoes AFTER the garlic-ginger paste has fried a while, otherwise ginger may be a little overpowering for some (like myself). This last time my husband (who is Indian) loved the curry and said it was one of the best dishes I've ever made. So thanks :).
