Khandvi - Indian Cooking Challenge


I missed almost all the previous Indian Cooking Challenges, but not this one! I would never give up an opportunity to make khandvi...its one of my favorite Gujarati snacks. They don't always come out great and even this time I barely used half the batter, the rest was too cold to spread:(. But I did enjoy the challenge and the dish was awesome. I made it this morning and after some quick pictures we had it for breakfast...a welcome change. YUMM!!



Khandvi
Recipe adapted from Lataji
Ingredients:
1 cup besan
1 cup sour curd
2 cups water
1" piece ginger
3-4 green chillies
1 tbs oil
2 tsps sugar
1/4 tsp turmeric powder
pinch of asafoetida
salt to taste

For tempering:
1 tbs oil
1 tsp mustard seeds
2-3 tbs chopped cilantro
2-3 tbs fresh grated coconut

Method:
Blend the ginger and green chili with some curd. Strain the mixture and mix with the remaining curds, water, gram flour, turmeric powder, sugar, oil, asafoetida and salt to form a smooth mixture free of lumps.
Cook the mixture over medium heat stirring continuously. Cook till the mixture starts to leave the sides of the pan, it will have a glossy look.
Spread immediately on a smooth surface into thin sheets. Cool for about 5 minutes.
Cut into broad strips using a knife and gently roll each strip to form spirals.
For the tempering , heat oil in a small pan and add the mustard seeds. Once it splutters, pour evenly over the prepared khandvi. Sprinkle the cilantro and coconut.
