Indian Cooking Challenge this month was all about Surattai Poli, a delicious sweet snack. This was a welcome break from all the cake and chocolates we've been having for the last few days. I made it last evening and we finished it this afternoon, irresistible!! The recipe was shared by Nithya, big thanks to her.
Ingredients:
For the filling:
1 cup roasted gram/ dalia
1 cup sugar
20 cashews, chopped fine
1 tbs coconut, grated
1 tsp ghee
1 tsp cardamom powder
For the Poli:
1 cup maida
pinch of salt
water
oil for frying
Method:
Roast the coconut and cashews in the ghee till the cashews turn golden. Powder the roasted gram and sugar and mix with all the other filling ingredients.
Mix the flour and salt and make a soft dough. Keep aside for 30 mins. Pinch out small portions of the dough and roll out into paper thin disks, they should be kind of transparent. I got about 16. Keep them rolled on paper for a little while.
Heat the oil and fry a poli for a few seconds on each side, till small bubbles appear on the surface. Remove and immediately spread 2 tbs of the filling in the center of the poli and roll it. Keep it on a dish with the seam side down. Repeat with the others. The rolls will become crisp as they cool.
The challenge is frying the polis for the right time and then rolling them before they cool. It is otherwise a really easy and quick dish to prepare and just delicious.
