Chocolate Chip Muffins


I feel like its been ages since I have posted anything new, not that I've not been cooking but I've just been busy with this n that and I just couldn't find the time to make a complete post. Another reason is that I'm trying to avoid the laptop as much as possible as I've broken my glasses and I haven't gotten around to making a new one as yet, so I end up with a headache almost everyday. I'm going to remedy that this weekend, so hopefully I will be blogging regularly from now on. I've also got a lot of events to catch up with.
Anyways I made these muffins a couple of days back and it's probably the easiest thing I ever baked. In the time it took to preheat the oven I was done with all the mixing and the muffins were ready to go in. As you can see they turned out perfect. Got the recipe from here, something I've had bookmarked for ages.



Chocolate Chip Muffins



Ingredients:

1 1/2 cups flour
1/3 cup granulated sugar
1/4 cup dark brown sugar, tightly packed
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup butter, melted and slightly cooled
1/2 cup milk
1 tsp vanilla extract
1 cup chocolate chips

Method:
Pre heat the oven to 375˚F. Line 12 muffin cups or grease the cups.
In a bowl, mix together the flour, sugars, baking powder, baking soda and salt and keep aside.
In another bowl, beat the eggs with a balloon whisk for 2 mins. Add the milk, butter and vanilla extract and stir.
Add the butter mixture to the dry ingredients and mix lightly just until combined. Stir in the chocolate chips.
Do not over mix the batter.
Spoon into the muffin cups and bake for 20-22 mins till done.

Serve the muffins warm. You can reheat it in the microwave for about 10 seconds. This will melt the chocolate slightly and it tastes just awesome.
