Lauki/ Bottle Gourd Dal


It's been a week at our new apartment and everything is unpacked and in place, but I'm not sure when I'll recover from all that weight lifting. I've never had a more strenuous workout:). Am not yet in the mood for any serious cooking and its just dal rice most of the days, something both of us love. Gonna laze around this weekend and I will be back to blogging full time next week. Lots to catch up!



Lauki Dal
Ingredients:
1 cup moong dal
1/4 tsp turmeric powder
1 tbs oil
1 tsp mustard seeds
1 tsp cumin seeds
a big pinch asafoetida
2 dry red chillies, broken
1 small onion, sliced
1 tomato, chopped
4 green chillies, chopped fine
2-3 big garlic cloves, chopped fine
1 small lauki/ bottle gourd, peeled and chopped into small pieces
3/4 tsp sambar powder
salt to taste
water
cilantro for garnish, chopped




Method:
Roast the dal on medium flame till it just begins to change color. Wash and pressure cook adding enough water, turmeric powder and some salt. When done, mash the dal well.
Heat oil in a kadhai and add the mustard and cumin. When they splutter add the hing and red chillies.
Add the onions and fry till golden.
Add the tomatoes, green chillies and garlic and cook till soft and mushy.
Add the lauki, sambar powder and salt and mix well. Cover and cook on low flame for 5 mins. If the mixture gets too dry, add some water.
Stir in the mashed the dal and enough water for required consistency. Mix well and bring to a boil, check the seasoning and let simmer for few mins. Garnish with cilantro and serve hot with rice.
