My daughter will be one in a short while, it's all happening too fast and watching her grow is such an incredible experience. Needless to say our life revolves around her. She babbles constantly and cruises around nonstop exploring every nook and corner of our home. All my time is spent chasing her and I'm enjoying every minute of it. I haven't been cooking anything extravagant, just some easy n quick dishes.
I baked these muffins last week and they were amazing. Recipe is adapted from here. Just made a few healthy changes...
Mocha Chocolate Chip Muffins
2 cups wheat flour
1 cup + 2tbs sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon powder
1/4 cup butter, melted
2 tbs cocoa powder
1 tbs instant coffee powder
1/4 cup applesauce
2 large eggs
2/3 cup low fat milk
1 tsp vanilla extract
1 1/4 cups semisweet chocolate chips
Preheat the oven to 375F and line the muffin pan.
Melt the butter and stir in the coffee and cocoa powders. Cool.
Whisk together the flour, baking powder, sugar, salt and cinnamon powder in a large bowl and make a well.
Whisk together the eggs, milk, applesauce and vanilla extract.
Tip in the egg and butter mixture into the flour mixture and stir until combined. Fold in the chocolate chips.
Divide equally into the muffin cups and bake for about 18 - 20 mins or until done. Test with a toothpick. Cool completely on a wire rack.
Tastes best warm.
