As a prelude to Srivalli's Indian Cooking Challenge, which is all set to begin on the 1st of July, it was decided to conduct a trial round and rava laddoo was chosen as the inaugural dish. Rava Laddoo is one of the easiest sweets you could make. Its totally hassle free, uses simple ingredients and could be made in no time. I have only helped mom to shape the laddoos before, this is the first time I made it all by myself and I'm so pleased with the results. This is a perfect recipe and I totally enjoyed the challenge.
It's my dad's birthday today and this one is for him. He loves sweets and I so wish I could stuff one into his mouth as I wish him.
Ingredients:
1 cup rava / semolina
1 cup sugar
25 gms ghee
25 ml milk
a pinch cardamom powder
10 whole cashew nuts
10 raisins
25 gms grated fresh coconut
Method:
Heat 2 tsp of ghee in a kadhai. Once the ghee is hot enough, reduce the flame and roast the cashew nuts and raisins. Once the raisins puff up, remove. Then roast the grated coconut. Remove once done. Keep all these aside.
Add the remaining ghee and roast the Rava on medium low flame till aromatic and just it begins to change color.

In a bowl, take the roasted rava, nuts, coconut and the Cardamom powder and mix. Add the sugar and mix well.
Then slowly add just enough warm milk into the bowl to help you to shape the mixture. You may not require all the 25ml. Transfer back yo the kadhai and cook in sim for 2 mins. Mix well, cover it and let it rest for 2 mins. Then immediately shape into laddoos.
