Ingredients:
1tbs ghee/oil
1tsp cumin seeds
1 small onion, finely chopped
3-4 green chillies, finely chopped
2 cardamoms
4 cloves
10 peppercorns
1 small stick cinnamon
1 bay leaf
1tbs ginger garlic paste
1/2tsp turmeric powder
1/2tsp coriander powder
1/4tsp garam masala
1 sprig curry leaves
1 medium carrot, chopped
10 french beans, chopped
1/2cup peas
1cup basmati rice, washed and drained
2cups water
salt to taste
Method:
Heat ghee/oil in a pan and add cumin seeds.
When brown add the onions, green chillies, cardamoms, cloves, peppercorns, cinnamon and bay leaf and saute onions are golden.
Add ginger garlic paste and fry till the raw smell disappears.
Add the turmeric, garam masala, coriander powder and curry leaves and fry for 1 min.
Add the vegetables and fry for 2-3mins.
Stir in the rice till well coated with all the masalas.
Add the water and salt and bring to a boil. Cover and cook on low for 15mins. Remove from flame but keep covered for 10mins more.
Serve with a raita of your choice.
